    Do you ever just feel like I have to do this today? I feel like baking today, tomorrow it is going to be 60 degrees wow. I like warm weather, but I don't bake much in warmer weather, my house just gets to HOT.

    Do you know I have a disability? (I think I mention it in a blog somewhere.) Anyways, yep, so baking for me is a chore. However; I learn to get it done, see life gives me and other these obstacles to overcome. With me I learn everyday how to do something different.

    In this case take a pan out of the oven is difficult; my left hand doesn't lift things up and down. Therefore I had to always ask for help, but one day I wanted some cookies, and I made a roast for dinner, but no one was home to help me. Therefore, I could just not eat or learn to do it a different way. I slid the pan out and with a great big oven glove. I slid the pan on to my right inch by inch I use my fingertips in my glove and move the pan to the center of my hand. After, getting a good balance I lifted it up to the counter and slide it onto the hot pad. This procedure took me awhile to learn, but know I learn it, and it works like a charm. I feel life is like baking, it could look good and be bad, or it could look awful and taste great. That is what I cook like. My Honey says I have the best slop he ever ate, yep the slop queen, I make a mean steak too.

    Delicious Lemon Squares

    Ingredients

    Bottom Layer:
    1/2 cup/125 mL butter
    1 cup/250 mL flour
    1/2 cup/125 mL chopped pecans
    1 tsp/5 mL Butter Extract, 2 oz
    Cream Layer:
    1 cup/250 mL powdered sugar
    8 oz/227 g fat-free or light cream cheese (at room temperature)
    1 tsp/5 mL Original Double-Strength Vanilla
    Half of a 1-quart/liter container of whipped topping

    Lemon Layer:
    1 pie filling recipe from Watkins Lemon Dessert package, using 2-1/2 cups/625 mL water, Lemon Dessert Mix 1 tbsp/15 mL lemon juice

    Cooking Directions

    Combine bottom layer ingredients and pack into an 11 x 7”/28 x 18 cm baking pan. Bake at 375°F/190°C for 15 minutes. Cool completely.

    Cream together powdered sugar and cream cheese. Add whipped topping and fold in. Prepare lemon pie filling; add lemon juice and let cool.

    Spread a thin layer of cream mixture over baked bottom layer. Spread lemon filling on top; spread rest of cream mixture on top of that. Chill. (Note: Chilling after applying lemon layer may make it easier to spread top layer.) Cut in large squares.

    (Note: Other Watkins Dessert Mixes may be used in place of Lemon.)


    Baking Powder Biscuits

    Ingredients

    2 cups/500 mL sifted all-purpose flour
    1 tbsp/15 mL Watkins Baking Powder
    1/2 tsp/2.5 mL salt
    5 tbsp/75 mL vegetable shortening
    3/4 cup/180 mL milk

    Cooking Directions

    Sift together flour, baking powder, and salt. Add shortening and cut into dry ingredients with two knives or pastry blender until mixture resembles coarse meal. Make a well in center and gradually add milk, stirring until a soft dough forms. Turn out onto lightly floured board and knead lightly for 30 seconds. Roll out 1/2 to 3/4-inch/1 to 2-cm thick. Cut with a floured biscuit cutter. Arrange on greased baking sheet. Bake at 450ºF/235ºC for 12 to 15 minutes or until golden brown.
